Crispy Air-Fried Cod Nuggets

 
 
 
 

Get ready for some seriously crispy AND healthy seafood with homemade air-fried cod nuggets. Making your own fish nuggets means you control what goes in them—no mystery additives or excess grease. And the best part? This recipe is super easy! It takes less than 15 minutes from start to finish, making it perfect for a quick weeknight dinner.

Wild cod's flaky texture pairs perfectly with the crunchy coating of panko breadcrumbs. Just dip the fish in egg, coat with breadcrumbs, and a quick spritz of olive oil ensures a beautifully golden finish in the air fryer. So good you’ll never go back to the store-bought fish sticks! Get ready for crispy goodness without the fuss!

INGREDIENTS

  • 1.5 lbs of wild cod, cut into nugget sized pieces

  • 2 cups plain panko breadcrumbs

  • Sea salt

  • Freshly ground black pepper

  • 1 egg + 1/4c egg whites or 2 eggs

  • Avocado or Extra Virgin Olive Oil (I keep EVOO in an oil spray bottle)

  • Your favorite sauce (such as tartar, BBQ, hot sauce, or a spicy aioli)

DIRECTIONS

1.Preheat your air fryer to 400F. Lightly brush avocado oil onto the air fryer basket.

2.In a medium mixing bowl, whisk egg. Dip fish into egg, then lay each piece onto panko breadcrumbs, turning to coat all sides well.

3.Spray olive oil (or drizzle) onto each fish stick, then arrange in a single layer in air fryer basket. Cook for 10 minutes total. You can flip halfway through but I often don’t and they turn out fine ;-) if I’ve lightly greased the basket (in step 1).

4.Enjoy immediately with your favorite sauce AND as a bonus, these work great leftover too! I love to toss them onto a salad with a chipotle greek yogurt dressing ~ yum!
