Dukkah Seasoning
Dukkah is a spice blend made from a variety of herbs, nuts and seeds. It's traditionally used as a dip for bread, but can also be used to add flavor to meats, vegetables and salads.
Making your own dukkah at home is easy and only requires a few ingredients. The most important ingredient in dukkah is the nuts, so feel free to experiment with different types of nuts to find the perfect flavor for you. Once you've selected your nuts, simply roast them in a dry skillet over medium heat until they're fragrant and slightly browned. Then, add the other ingredients - such as sesame seeds, coriander and cumin - and grind everything together into a fine powder using a mortar and pestle or coffee grinder.
Ingredients
1/2 cup almonds, raw
1/2 cup pistachios, raw, shelled
3 Tbs sesame seeds, raw
2 Tbs coriander seeds
1 tsp cumin seeds
1/2 tsp cardamom, ground
1 tsp salt

Prep
Preheat oven to 350° F and line baking sheet with parchment paper.
Make
Spread almonds and pistachios on a baking sheet and toast until fragrant and golden, about 5-7 minutes. Set aside to cool.
In a small non-stick skillet, toast the cumin and coriander seeds for about 2 minutes over medium-low heat until fragrant. Set aside separate from the nuts.
In the same skillet, toast sesame seeds until just golden, about 2 minutes. Set aside separate from nuts and other seeds.
Add cumin and coriander to a blender or food processor and process until they are broken into smaller pieces. Add almonds and pistachios and pulse a few more times until crumbled. DO NOT over-process.
Stir in sesame seeds, cardamom, and salt.
Place in a glass container with lid and store in a cool, dry place for up to 1 month. If you store in the refrigerator, you can store for up to 2 months.
