Shaved Brussels Salad

 
 

This recipe for shaved Brussels sprouts salad is a healthy and delicious way to get your daily intake of vegetables. Raw Brussels sprouts are paired with a creamy tahini dressing to create a flavorful combination. The star of this dish is the dressing – made from sesame seed paste, dijon, maple syrup and olive oil – that adds an exotic nutty flavor and extra creaminess to the salad. This simple yet tasty salad is easy to make yet packs a punch in terms of nutrition and flavor! With its unique combination of ingredients, it's an ideal accompaniment for any meal.

Ingredients

  • 2 lb Brussels sprouts, shaved

  • 2 pears, chopped

  • 1 cup pomegranate arils (1 small pomegranate)

  • 1/3 cup pecans, raw, roughly chopped

  • plus protein of choice to add to salad (I love sautéing shrimp or adding chicken)

Directions

Prep

  1. Using a food processor, shave the Brussels sprouts.

  2. Seed the pomegranate (if necessary).

  3. Roughly chop the pecans.

  4. Chop the pears.

Make

  1. Cook the rice and set aside. If tightly covered, it should stay warm for up to 30 minutes (or reheat in the microwave).

  2. Heat the oil in a large saucepan over medium heat. Add the onion and bell peppers. Cook, stirring occasionally, until softened, about 5 minutes.

  3. Add the garlic, cajun seasoning and cumin and stir for 1 minute.

  4. Stir in the broth, beans, thyme, parsley, red pepper flakes and bay leaf and bring to a simmer.

  5. Cook, uncovered, stirring often, until the broth reduces slightly (15 to 20 minutes).

  6. Season to taste with salt and pepper.

  7. Spoon the rice into bowls and top with the beans. Serve hot.

Creamy Tahini Dressing

Ingredients

  • 1/4 cup olive oil

  • 1/4 cup tahini

  • 1 lemon, juiced (for 1/2 Tbs juice)

  • 2 tsp Dijon mustard

  • 2 tsp maple syrup

  • 2 Tbs cold water

  • 1 clove garlic (optional)

  • salt, to taste

  • black pepper, to taste

Directions

Make

  1. Combine the shaved Brussels sprouts, pears, pomegranates, and pecans in a bowl.

  2. To make the dressing, combine all ingredients in a mason jar and shake to emulsify. If necessary add more water to thin the dressing. Season to taste with salt.

  3. When ready to serve the salad, drizzle the dressing over the salad ingredients and toss to combine.

Optional

Add your favorite brown rice, black lentils or quinoa.
