SMORES COOKIES!
Aside from the most delicious indulgence … what I love about these cookies is the fat source: extra virgin olive oil (instead of butter) & you’ll NEVER know it! But make no mistake, these are still very much a calorie bomb dessert, so enjoy every bite that you have; they are truly some of the best! My teen uncovered the recipe on Tik-Tok and this is her variation:
Servings: about 12 cookies
Ingredients
- 1 + 1/4 cup all purpose flour 
- 1/2 tsp baking soda 
- 1/2 tsp salt 
- 1/4 cup extra virgin olive oil 
- 1 egg 
- 1/2 cup brown sugar 
- 2 tsp vanilla 
- 1/2 cup chocolate chips milk or dark chocolate chips (I love to use Lily’s to cut the sugar) 
- 1/2 cup mini marshmallows 
- 1/2 cup crushed graham crackers (leave a few chunks) 
Instructions
- Preheat oven to 350 degrees F 
- In a medium bowl, mix together flour, baking soda and salt 
- In a separate bowl, combine olive oil, brown sugar, egg and vanilla. Add the flour mixture slowly to the sugar mixture and mix until fully combined. 
- Once the dough is formed, manually stir in the chocolate chips, graham crackers & mini-marshmallows. 
- Roll dough into about 12 tablespoon sized balls and place on a parchment paper lined cookie sheet (do not press them down ~ leave them in a ball shape) 
- Bake for 9-12 minutes or until tops begin to turn golden brown 
- Once done, remove from oven, then gently press down on the tops of the cookies to flatten them just a little.
