SMORES COOKIES!
Aside from the most delicious indulgence … what I love about these cookies is the fat source: extra virgin olive oil (instead of butter) & you’ll NEVER know it! But make no mistake, these are still very much a calorie bomb dessert, so enjoy every bite that you have; they are truly some of the best! My teen uncovered the recipe on Tik-Tok and this is her variation:
Servings: about 12 cookies
Ingredients
1 + 1/4 cup all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/4 cup extra virgin olive oil
1 egg
1/2 cup brown sugar
2 tsp vanilla
1/2 cup chocolate chips milk or dark chocolate chips (I love to use Lily’s to cut the sugar)
1/2 cup mini marshmallows
1/2 cup crushed graham crackers (leave a few chunks)
Instructions
Preheat oven to 350 degrees F
In a medium bowl, mix together flour, baking soda and salt
In a separate bowl, combine olive oil, brown sugar, egg and vanilla. Add the flour mixture slowly to the sugar mixture and mix until fully combined.
Once the dough is formed, manually stir in the chocolate chips, graham crackers & mini-marshmallows.
Roll dough into about 12 tablespoon sized balls and place on a parchment paper lined cookie sheet (do not press them down ~ leave them in a ball shape)
Bake for 9-12 minutes or until tops begin to turn golden brown
Once done, remove from oven, then gently press down on the tops of the cookies to flatten them just a little.
