TOFU CHOCOLATE MOUSSE
High protein + dessert? Yes please!
Chocolate and tofu come together to make a rich and creamy mousse that is perfect for any chocolate lover with just 6 ingredients! To me it’s the perfect blend of a mousse and a pudding. It’s simply DELICIOUS! You’ve got to try it!
- 10 oz dark chocolate, chopped 
- 4 Tbs maple syrup 
- 2 tsp vanilla extract 
- 1/2 tsp salt 
- 2 cups silken tofu (16oz = 1 package) 
- 2 Tbs water 
- OPTIONAL: Fresh raspberries, strawberries or blueberries 
Directions:
Prep
- Melt the chocolate in a bowl over a double boiler. Remove the pan from the heat as soon as the chocolate has melted - be very careful not to burn it. 
Make
- In a blender combine the maple syrup, vanilla extract, silken tofu, water, and melted chocolate. Blend until thoroughly combined. 
- Divide equally between 8 - 1/2 cup ramekins or mason jars. Cover and refrigerate for at least 2 hours. 
- Top with raspberries or strawberries!
