Veggie Loaded Meatloaf

INGREDIENTS
2/3 cups carrots, finely shredded
2/3 cups zucchini, finely shredded
1 tsp basil, dried
1 tsp rosemary, dried
1 tsp garlic powder
1 lb ground turkey
1 lb grass-fed beef
2 eggs
1 Tbs Dijon mustard
pinch of salt & pepper (each person can always add more at the table)
DIRECTIONS
Preheat the oven to 350°F.
Shred carrots and zucchini.
In a large bowl, combine the carrots, zucchini, basil, rosemary, garlic powder, and meat.
Add the eggs, salt & pepper and make sure it is evenly combined.
Place the meat mixture into a loaf pan and spread the Dijon mustard over the top.
Bake for 1 hour or until cooked through.
